Indian curry known for its rich flavours, here is a healthy and tasty recipe of the Egg curry comes with a twist of spinach. It’s a protein-rich dish with the benefits of spinach and boiled eggs.
Ingredients
- Boiled eggs (4) chopped spinach (2 leaves)
- finely chopped onion (1)
- tomatoes for purée (2)
- ginger-garlic paste (1 tsp)
- cumin seeds (1/2 tsp)
- turmeric powder (1/2 tsp)
- red chilli powder (1 tsp)
- coriander powder (1 tsp)
- salt
- oil (2 tbsp)
- and water as needed.
Step By Step Guide
Boil The Eggs
Fill a saucepan halfway with water, dip the eggs into it and let it boil for 8-10 minutes.
Prepare Spinach Puree
Add chopped spinach in an oil heated pan, let it cook for 3-4 minutes then stir into a smooth puree.
Prepare The Masala
Add cumin seeds to a heated oil pan and let it flatten then add finely sliced onions and tomatoes and saute it until golden brown. After that, add 1 tsp ginger- garlic paste and cook it for a minute.
Mix In Tomatoes And Spices
Mix tomato puree, turmeric powder, chilli powder, coriander powder and salt. Cook until the masala releases oil.
Add Spinach And Eggs
Pour in the spinach puree with some water for consistency, lower the heat and let it cook for 5 minutes then gently add the boiled eggs and cook for another 4-5 minutes.
Garnish And Serve
Garnish the egg curry with fresh cream and serve it with naan or steamed rice.
