Ingredients
- Cooked Rice: 3 cups
- Oil: 2 tbsp
- Garlic: 3 cloves finely chopped
- Onion: 1 small finely chopped
- Carrot: 1 medium diced small
- Capsicum: 1 small diced
- Green Peas: 1/2 cup
- Spring Onions: 2-3 stalks finely chopped (separate white and green parts)
- Soy Sauce: 2 tbsp
- Vinegar: 1 tsp (optional)
- Black Pepper Powder: 1/2 tsp
- Salt: To taste
- Eggs (optional): 2 beaten (for egg fried rice)
- Optional Add-ins: Protein: Cooked chicken or shrimp or tofu
- Chili Sauce: 1 tsp (for extra spice)
Step By Step Guide
Prepare The Rice
Use leftover or cooled rice to ensure the grains remain separate and non-sticky.
Break up any clumps of rice using a fork or your hands.
Stir-Fry Vegetables
Heat oil in a large wok or pan over medium-high heat.
Add chopped garlic and sauté for a few seconds until fragrant.
Toss in the onions, spring onion whites, carrots, peas, and capsicum. Stir-fry for 2-3 minutes, maintaining a high flame to keep the vegetables crunchy.
Add Eggs (Optional)
If using eggs, push the veggies to one side of the pan. Pour the beaten eggs on the empty side.
Scramble the eggs until cooked, then mix them with the vegetables.
Combine Rice And Sauces
Add the cooked rice to the wok and toss well with the vegetables.
