Ingredients
- For Cooking Pasta: 200 grams penne pasta (approximately 2 cups)
- 6 cups water
- 1 tablespoon salt
- For Basil Pesto: 2 cups fresh basil leaves
- ½ cup walnuts (or pine nuts)
- ¼ cup grated Parmesan cheese
- ¼ cup extra virgin olive oil
- 4-6 garlic cloves
- Salt and pepper to taste
- Additional Ingredients:1 cup cherry tomatoes halved
- 2-4 tablespoons heavy cream (optional)
- 1 tablespoon coarsely chopped walnuts (for garnish)
Step By Step Guide
Cook The Pasta
In a large saucepan, bring the water to a boil and add the salt.
Add the penne pasta and cook until al dente according to package instructions. Reserve about 1 cup of the pasta water, then drain the rest.
Make The Basil Pesto
While the pasta is cooking, prepare the pesto. In a food processor, combine the basil leaves, walnuts, Parmesan cheese, and garlic cloves.
Blend until finely chopped. While blending, slowly drizzle in the olive oil until you reach your desired consistency. Season with salt and pepper to taste.
Combine Pasta And Pesto
In a large mixing bowl, combine the drained pasta with the pesto sauce. Add cherry tomatoes and heavy cream if using.
Toss everything together, adding reserved pasta water as needed to achieve a creamy consistency.
Serve
Garnish with chopped walnuts and additional Parmesan cheese if desired.
Serve immediately with crusty bread or a side salad.
Pro Tips
Add grilled chicken, shrimp, or sautéed mushrooms for extra protein.
Swap pine nuts for almonds, cashews, or walnuts for a budget-friendly alternative.
