There’s nothing like warm, fluffy banana pancakes to start your day on a sweet note! Whether you’re looking for a quick weekday breakfast or a lazy weekend treat, these pancakes are soft, naturally sweet, and packed with banana flavor. They’re easy to whip up with simple ingredients and taste amazing with maple syrup, fresh fruit, or a dollop of butter. Plus, they make a great way to use up overripe bananas!
Ingredients
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon cinnamon (optional)
- ¼ teaspoon salt
- ¾ cup ripe bananas mashed (about 1 to 1.5 large bananas)
- 1 large egg
- ¾ cup milk
- Butter or oil for cooking
- Sliced bananas and maple syrup for serving
Step By Step Guide
Prepare The Batter
In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt and in another bowl, beat the mashed bananas and egg together until well blended. Then whisk in the milk until combined.
Gradually add the dry ingredients to the banana mixture, stirring until just combined. The batter may be slightly lumpy but do not overmix.
Cook The Pancakes:
Heat a large nonstick pan or griddle over medium heat and lightly grease it with butter or oil.
Pour about ⅓ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
Serve
Serve the pancakes warm with sliced bananas and maple syrup on top.
Pro Tips
Add chocolate chips, nuts, or blueberries for extra texture and flavor.
Make it healthier by using whole wheat flour and reducing the sugar.
Store leftover pancakes in the fridge for up to 3 days or freeze them for later just reheat and enjoy!
