Bhindi Masala is a classic North Indian dish made with tender bhindi, aromatic spices, and a rich, flavorful masala. This easy to make dish is perfect for a wholesome lunch or dinner and pairs beautifully with roti, paratha, or steamed rice.
Ingredients
- 250g bhindi chopped into 1-inch pieces
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 medium onion finely chopped
- 2 medium tomatoes finely chopped
- 2 green chilies slit (optional)
- 1 teaspoon ginger-garlic paste
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- Salt to taste
- 1 teaspoon dried fenugreek leaves (kasuri methi) (optional)
- 1 tablespoon chopped coriander leaves for garnish
Step By Step Guide
Prep The Bhindi
Rinse 250 grams of bhindi well under running water. Wipe them dry with a clean cloth or kitchen tissues.
Saute The Bhindi
Heat 1 to 2 tablespoons oil in a pan. Add chopped bhindi and saute them well for 5 to 7 mins on a medium heat. Once the bhindi is lightly browned and no longer slimy, remove it from the pan and set aside.
Prepare The Masala
In the same pan, add another 1 tablespoon oil and heat it. Add cumin seeds and let them splutter. Add 1 cup chopped onions and 1 green chili. Stir in ginger-garlic paste and green chili. Cook for 1 minute until fragrant.
Add Spices
Then add chopped tomatoes, salt, turmeric, red chili powder, coriander powder, and garam masala. Cook until tomatoes soften and the oil starts to separate. Pour little less than half cup of water and mix well and cook this masala until it turns thick.
Combine Bhindi & Masala
Add the sauted bhindi back into the pan. Mix well so it’s coated with the masala. Cover and cook on low heat for 5-7 minutes, stirring occasionally.
Garnish & Serve
Garnish with fresh coriander leaves and serve hot with roti, paratha, or dal-rice for a comforting meal.
