Crispy & Creamy Kunafa – A Must Have Iftar Dessert News24 –


As Ramadan approaches Iftar menus are taking shape and one dessert that always makes its way to the table is Kunafa. The middle east dessert is a rich, crispy layer of shredded pastry which is an ultimate way to end your fast on a sweet note. 

Ingredients

  • For the Kunafa Base: 250g kunafa/kataifi pastry (shredded phyllo dough)
  • ½ cup unsalted butter (melted)
  • 2 tbsp powdered sugar
  • For the Filling: 1 cup ricotta cheese or mozzarella (or a mix of both)
  • ½ cup heavy cream (optional for creamier texture)
  • For the Sugar Syrup: 1 cup sugar
  • ½ cup water
  • 1 tsp lemon juice
  • ½ tsp rose water or orange blossom water (optional)
  • For Garnish: ¼ cup crushed pistachios

Step By Step Guide

Prepare The Sugar Syrup

Combine Sugar,water, and lemon juice in a saucepan over medium heat and stir until the sugar dissolves. Let it simmer for 5 to 7 minutes until it is slightly thickened. Remove from heat and add rose water or orange blossom water to give it a traditional taste.

Prepare The Kunafa Dough

Preheat the oven to 180°C (350°F). Break the kunafa pastry into fine shreds using your hands. Pour melted butter over the kunafa and mix it well until all strands are coated and divide the kunafa dough into two equal portions.

Assemble The Kunafa

Grease a baking dish and spread half of the kunafa dough evenly as the base and press it firmly. Add the cheese filling over the base and cover with the remaining kunafa dough and press it down gently.

Bake The Kunafa

Bake for 30-35 minutes or until golden brown and crispy. Remove from the oven and immediately pour the cooled sugar syrup evenly over the hot kunafa.

Garnish & Serve

Sprinkle with crushed pistachios for extra crunch and color. Let it sit for 5-10 minutes before slicing and serving warm.
