Rasmalai is the ultimate craving satisfier for the sweet tooth, which is made up of soft cottage cheese balls indluged in kesar flavoured milk, here is the quick recipe to make the dessert at home.

Ingredients

  • Heavy milk (1 litre)
  • lime juice or vinegar (1 tbsp)
  • sugar (1 cup)
  • water (4 cups)
  • milk for Rabri (1 cup)
  • cardamom powder (1/2 tsp)
  • saffron strands
  • chopped pistachios and almonds or cashews
  • and rose water.

Step By Step Guide

Prepare The Chenna

Bring 1 liter of milk to boil in a pan on medium heat, add around 1 tsp of vinegar and let the milk curdle. Once the milk is curdle strain it through a cloth and rinse it with water to remove the sourness and let it dry completely for 30 minutes.

Make The Chenna Balls

Mold the paneer for 8-10 minutes until smooth, shape the balls into rounds without cracks. Boil 4 cups of water with 1/2 cup sugar and drop the balls in the syrup and let them cook on medium heat for 15 minutes until the balls absorb the syrup.

Cook The Rabri

Stir 1 cup of milk and bring it to a boil by simmering on low heat then add sugar, cardamom powder, saffron and rose water mix well and let it cool.

Let It Chill

Delicately squeeze the syrup from the balls and pour the rabri over them, refrigerate it for 2 hours.

Garnish And Serve

Take out the rasmalai from refrigerator garnish with chopped pistachios, cashews and almonds. Serve and enjoy homemade delicious rasmalai.
