Biryani is now being savoured in every Indian family on all occasions. This step-by-step guide will help you easily cook the perfect Afghani biryani within a few minutes.

Ingredients

  • 2 cups of Basmati rice
  • Ghee
  • Garam masala
  • 500g of mutton or chicken
  • Spices (cardamom
  • cloves
  • bay leaf
  • cinnamon)
  • 1 cup yogurt
  • Fresh mint leaves and coriander
  • 2 tbsp of Ginger-garlic paste
  • Oil
  • Salt
  • 1 cup of Fried onions
  • 2 Green chilies
  • Food colour or Saffron

Step By Step Guide

Prepare The Marinade For Meat

In the first step, you will have to marinate the chicken or mutton with ginger-garlic paste, yogurt, and a pinch salt and garam masala. Let it rest for at least 1-2 hours.

Prepare The Rice

In the next stage, you have to boil 2 cups of basmati rice in water with whole spices (cardamom, cloves, bay leaf, cinnamon) and salt until it’s well cooked. Then, drain the water and set the rice aside.

Cook The Meat

Moving on to the next step, take a deep pot and place it over a medium flame. Heat oil and ghee, then add the marinated meat and whole spices. Cook until the oil separates and the meat starts to tenderize.

Assemble The Meat And Rice

Following on to the next step, take a heavy-bottomed pot and layer the cooked meat, followed by rice. Sprinkle saffron water (or food color), coriander, fried onions, and mint between layers.

Seal And Cook On Low Flame

In the final stage, you have to use a dough seal or tight lid to cover the pot. Then cook on medium-low heat for at least 20–25 minutes to achieve aromatic flavours (this is also known as the ‘dum’ method).

Serve The Dish

Once you are done with the above steps, gently place the biryani on a plate and serve hot with salad, Afghani chutney or raita.
