Chicken Recipe: Sliced chicken is used with spicy rice in biryani. Additionally, each piece of chicken in this recipe will have rice combined with spices. From this point of view, referring to it as “Reverse Biryani” is not entirely incorrect. But this food has a name of its own. Topkapi. It is produced in Turkey.

Component:
For the rice –
- Wash 1 cup of rice and soak for 15 minutes
- 1 tbsp Oil
- 1 onion chopped
- 2 tbsp cashew nuts
- Soak 1 tablespoon of black raisins in water
- Half a teaspoon of pepper powder, cinnamon powder and chiliflakes
- 1 tsp Salt
- Half a cup of warm water
For the chicken –
- 5 Boneless Chicken (Chest Meat)
- 1 tablespoon Lemon juice
- 1 tsp Salt
- 1 tsp Chili Flakes
- 1 tsp Black Pepper Powder
As for the gravy—
- 1 cup Warm Water
- 1 tbsp Tomato paste
- Garlic, onion, chili flakes
- Salt and oil as needed
Topkapi Cooking Method
Cut the chicken breast into a wide sheet by slicing it into thin layers. Next, combine the meat chunks, lemon juice, salt, chilies, and pepper in a bowl and let it soak for one to two hours.
Put the onion in a pan with heated oil and stir. After the rice has been soaked, stir once more. Next, add the soaked raisins, chopped cashews, and all the salt and spices for the mix. Pour half a cup of boiling water into it, stir for a few more minutes, and then turn off the heat before the water dries completely.
Now take a small bowl. Fill it with a thin slice of meat and arrange it into a bowl. After adding the rice, tightly wrap it. Stir the garlic and a small amount of oil in a pan until the raw scent disappears.
Next, mix in the onion paste until it has a raw scent. Add the chili flakes and tomato paste to finish. After the oil is separated, bring it to a boil with hot water and remove it after it thickens.
Each filled chicken ball should be placed on a baking tray, covered with tomato gravy, and baked for 40 minutes at 200 degrees Celsius. You will know that the topkapi is ready if the chicken ball is totally brown.
Additional Cooking Tips
To prepare this recipe without an oven, boil the rice until it is 80% cooked, without overheating it. After then, it must be used as a mix. Marinate the meat for 30 minutes if cooking it without an oven. In that scenario, add a little extra oil to the pan and carefully feed the meat balls in. in order to prevent the wrap from opening or being raw.
